Thai Chicken Lime Stir Fry

2 tablespoons vegetable oil
½ cup chopped red onion
6 cloves garlic, chopped
1 pound boneless chicken thigh meat, chopped
2 jalapeno peppers, seeded, finely minced
2 small kaffir leaves, optional
2 tablespoons fish sauce
2 tablespoons fresh lime juice
2 tablespoons soy sauce
1 tablespoon brown sugar
1 cup fresh Thai holy or Thai sweet basil (may use regular basil)
Salt and pepper, to taste
2 cups cooked white rice, for serving


1) Heat oil in a wok or large skillet over high heat. Add onion and garlic; cook 2 minutes, stirring constantly. Add chicken and cook until no longer pink, about 3 to 5 minutes, stirring.2) Add peppers and kaffir leaves; cook 30 seconds, until fragrant. Add fish sauce, lime juice, soy sauce, and sugar; cook until liquid thickens, about 2 minutes.

3) Add basil and cook until just wilted, stirring. Season to taste with salt and pepper and serve warm with rice.
